The idea for this wine was actually born more than a decade ago in conversation with Chris at his famed Pizzeria Bianco in Phoenix, Arizona. The topic was the synchronicity of two delicious things made to share—pizza and wine—eight equal slices and an open bottle at the center of a table. Two staples with a rich history of bringing people together. We imagined a wine specifically crafted to pair with the food on the table that night, particularly Chris’s Bianco DiNapoli organic tomatoes and sauce, so central to his simple yet refined cuisine.
Nearly two years ago, amid another conversation—this one shaped by the state of the world and the urgent need for food and wine to reconnect us—we realized the time had finally come. It was exactly the right moment to make this wine.
Here’s the story behind the making of the 2023 Call & Response:
Crafting an intentional blend
Admittedly, at first it felt like an intimidating task to craft a wine that would be a perfect match for Chris’s cuisine — after all, tomatoes present some challenges for wine pairing. The prominent sweet-sour balance of tomatoes begs for a wine with an appropriate balance of sweet fruit, bright acidity, and fine tannins that cleanse the palate. Furthermore, the savory ingredients that often accompany tomatoes — meats, mushrooms, cheese, peppers, herbs, and so on — are, in our opinion, best matched by a wine that presents delicately savory aromas layered in with the aromas of fruit.
Sangiovese is commonly considered the most famous pairing for tomato-based cuisine, presenting savory aromas of tomato leaf, leather, tobacco, and dried herbs, and offering a palate of sweet-tart cherry fruit. But we don’t have Sangiovese in our cellar, so how could we capture a similar balance of aroma and texture?! The answer wasn’t immediately apparent, but eventually a strategy emerged. We decided to capture some savory aromatics by including Cabernet Franc, known for its savory bouquet of peppers, herbs, tobacco, and florals. We then discovered that if we brought Gamay Noir to the party, we’d get that bright, crunchy acidity we needed. Finally, we added Pinot Noir into the blend to promote the elegant, fine-grain tannin structure we were looking for. Each of these varietals contributed nuance to a dynamic range of deep red fruit character, with an appropriate concentration of sweetness to match the sweetness of tomatoes.
We fine-tuned our blend, then we set about putting the wine to the test, first in the winery kitchen, acquiring Bianco DiNapoli tomatoes and following Chris’s recipes for marinara, pizza, and pasta. We gained confidence that we had created a great match for Chris’s cuisine. Subsequently, multiple visits were made to Pizzeria Bianco in Phoenix for tasting sessions. Ultimately, Chris enthusiastically offered his blessing on the wine, and the 2023 Call & Response was born.

Behind the name & label
In music, “Call & Response” is both a collaborative style and a cultural practice rooted in African musical traditions—one that creates a dynamic connection between artists and the audience. Often, one voice creates tension while another offers resolution, building rhythm and energy in the exchange. When the audience is called—frequently through chant—everyone can participate, regardless of musical skill. We see this wine as a “Call & Response” between a winemaker and a chef, with an open invitation for all to participate.
The wine’s label draws inspiration from this tradition as it appeared in hip hop of the 1990s and 2000s, particularly Jurassic 5’s landmark album Power in Numbers. Phoenix-based artist Tanner Christensen created the original front-label artwork as an interpretation of that album’s cover, integrating a Phoenix skyline and a Bianco Marinara pizza lifted above the crowd.
We’ve always considered both Martin Woods and our wine bar HiFi to sit comfortably at the intersection of wine, food, and music—with the intention of bringing people together.
The 2023 Call & Response and its label feel right at home.
The pleasure of collaborating with Chris on this project and bringing its intention fully to life has truly been an honor.
Chris Bianco’s influence on food and beverage culture over the past few decades is hard to overstate. As the first pizzaiolo to receive a James Beard Award, Chris is widely credited with redefining American pizza. He has inspired an entire generation of chefs, in addition to cultivating one of their favorite ingredients: Bianco DiNapoli Tomatoes. Most importantly, he is one of the most quality, well-intentioned humans we have had the pleasure of knowing.
